Ingredients:
2 tablespoons olive oil
1 ½ cup cheddar cheez-it crackers
¾ teaspoon black pepper
1 ¼ pound chicken tenders
1/3 cup Dijon mustard
Put oven rack in lower 1/3 of oven and preheat to 475
degrees. Spray baking dish.
Pulse crackers in a food processor, add pepper. Toss tenders
with mustard and dredge in cracker mixture. Arrange in one layer without
crowding. Bake, flipping once, until golden brown, about 15 minutes.
